I was over at Daily Pleasures and she started this post about how you shop, how you save money, what you splurge on and what you skimp on. It really is a great post and all the comments are just as good and full of valuable information. Go check it out.
It got me thinking about what we do when we have to do without.
Years ago, when we only had 5 children, my husband’s work was slow and he ended up being home for the winter I had to learn to eat out of only what was in my pantry. That thought was completely foreign to me. With him home and no money coming in we really had to be creative. There was only one problem. I’m was not creative ~at all~. Especially in the kitchen :-/ Thankfully John is. I’ve learned so much from watching him go into our pantry with “nothing” in it and have him pull out ingredients to make a pizza or chicken and dumplings! You mean you can make pizza sauce and biscuits don’t have to come in a can from the store? See I really had a long way to go with my cooking skills :-0
It was during this winter that we started making homemade beans. I’m sorry, I mean, my husband started making them, cause I had no idea how to. Today I can whip up beans in a jiffy (except at Mountain Mama’s house :-) ha ha… are the beans still cooking Ashley?)
My husband learned that winter how to make homemade tortillas. Then he taught me. Today we can all whip up a batch of yummy, soft tortillas while the beans are cooking and enjoy homemade tortillas and hot beans for dinner.
There have been times since that we’ve had to give up our organic desires, fresh foods and live on top ramen, spaghetti without meat, no snacks, mac and cheese from the box and powdered milk.
It was through all our hard times that the Lord allowed me to learn how to cook, prepare, save, buy wisely and s-t-r-e-t-c-h the ever shrinking dollar. Guess God knew, way back then, that I’d have more children coming along, so I’d better learn how to cook quick :-) I’m so glad He did.
So let me ask you……with your ever growing children, what one meal stretches the dollar in your house? What do you cook when funds are slim and you have to be creative? Can’t wait to see what delights you whip up :-)

It's not really a meal, but I make a batch of 6 loaves of whole wheat bread from freshly ground wheat to stretch the dollar. I can make high quality, nutritious bread for less than .50 a loaf. Then we can use that in many ways...sandwiches, french toast, regular toast or just yummy bread and butter.
I love this post. Thank you for the info. I am excited to make homemade tortillas, never have before..... God is faithful huh? When we have not much he blesses the fruits of our labors. Blessings.
